It's okay. Just be sure not to overcook your calamari----or else you'll end up with rubber bands!

frying is ok - some oils are better than others however... You want to use 'expeller-pressed' oils if possible.

when frying meat I use Safflower oil or Canola oil. I have used these for frying chicken (no breading of any type) - if you put your normal spices on the chicken and after the skin is brown turn it down, put a lid on it and cook it slow you'll never realize it isn't the fried chicken you know and love!

When I fry an egg I put a small amount of canola oil (maybe a 1/2 tsp) in the pan and a pat of butter -- it's all good

You could also use crushed pork rinds or a mix of parmesan/pork rinds.

My suggestion would be the pork rinds too. They make an excellent breading. Also try to use real butter, it tastes better than margarine and you can pronounce all two of the ingredients. LOL.

I did ask this in another thread but here I go again

Ellizellen, what brand of pork rinds do you buy? or do you make your own? only every packet I have found here in the UK always have sugar either in its pure form or as dextrose, etc & rusk which contains wheat listed. I would like to have somethig crispy & savoury to snack on once in a while, getting a bit fed up with Parmesan crisps!

                          Re: is frying ok?

You are right, pork cracklings/scratchings in UK usually have dextrose and/or rusk in them.

I have bought them 'loose' from the butcher on occasion and they assured me that there was nothing added to theirs.

I have also made them by cutting off the skin from a pork joint, scoring it deeply, sprinkling with salt and roasting it.

One UK member told me a while ago that she was able to buy just the skin from pork from her butcher for this and even said she had seen pork skin on sale at Morrisons, but we don't have them in our area to check out.
