Eating three cups of veggies in one sitting has the potential to cause a sudden increase in your blood sugar levels. This increase will also trigger a quick release of insulin, which may bring your blood sugar lower than it was before eating the vegetables. A lower blood sugar is usually equivalent to cravings. Doesn't this give a totally new meaning to Lay's slogan, "betcha you can't eat just one"?
To answer other question. These days I do have meals when I eat 2-3 cups of vegetables in one sitting. But I am in OWL, so my veggies add up to about 5-6 servings per day and I know more about what foods (and amounts) my body can tolerate than does someone on induction."Get action. Seize the moment. I had a similar question.The guidelines say that 12-15 carbs should come from veggies. But with 1 cup of lettuce, 1 cup of cabbage 1/2 cup tomato and 1/2 cucumber I have 3 cups but I dont have 12 carbs from vegies...
and when it says 3 cups it means all day long isn't it?Not 3 for lunch and 3 for dinner, cause if i had 6 cups I would had 12 carbs

Three cups per day.
The 12-15 g rule was invented by the Atkins Company; Dr. Atkins never wrote anything like that in DANDR 2002. However, in order to be able to eat cheese, sour cream, eggs, etc. and still get most of your carbohydrates from vegetables, you should aim for veggies higher in carbs.
Cabbage and tomatoes are both on the "other veggies" list. "Other veggies" are limited to 1 cup per day. In the example you give, there is 1.5 cups.But with 1 cup of lettuce, 1 cup of cabbage 1/2 cup tomato and 1/2 cucumber I have 3 cups but I dont have 12 carbs from vegies...

I was pretty sure I shouldn't do it in one sitting, but didn't have my book on me to reference it.
