  • Veggie question and pork rind question

    Hi. I was just wondering what the opinion is on canned veggies vs. fresh or frozen. Does it really matter?

    Also, the book lists broccoli under the "1 cup a day" list of acceptable veggies during induction. I could eat broccoli, collard greens and spinach everyday. Am I messing up just sticking with these and salad greens, or should I be eating the others from the list? Might sound like a silly question, I just don't want to get off on the wrong foot with this.

    Would also be interested in the opinion on pork rinds. I love them, and my cousin (doing Atkins) told me they're ok even during induction.

    Different 'colors' of veggies yield different nutrients. You will get in yellow squash different nutrients than in your greens, but the greens you list are terrific veggies! So I would say.. you choose. Variety is good, but you are taking a good multi, right? so you are not likely to suffer from sticking with the vegetables you list.

    Personally, I think fresher vegetables are going to give you more cancer-fighting nutrients, those polyphenols and stuff folks keep talking about. Fresh best.. frozen next in line.. canned last in my opinion.. but that is just my opinion.

    And high five on loving your collards.. they rock. I love frying up some bacon pieces and then just adding a whole bag of the fresh bagged ones and cooking them up.. no water needed..don't forget the onion!

      Oh! Pork rinds, generally okay in moderation. Easy to overdo, be conscious of the salt.

        If you are eating 3 cups of vegetables per day -- maximum 1 cup from the "Other Vegetables" list and the rest from the "Salad Vegetables" list -- it doesn't matter which ones you choose.

        A long, long time ago, there was a member on this board who was part of the Duke study (see DANDR 2002). She said that, for that study, Dr. Atkins recommended limiting pork rinds to 1 cup per day (not crushed, of course ).

        Pork rinds are also tricky if you are sensitive to sodium, because it will make you retain water. At the end of the 2-week induction, when you will be determining your degree of metabolic resistance using the chart on page 158 of DANDR 2002, this might skew the results showing you a smaller weight loss.

        If you don't have a salt issue or are willing to take a chance, and you limit them to 1 cup per day, pork rinds are okay.

          One last note--canned veggies often have more sodium than fresh, too.

            Fresh in season is the best choice in veggies, but next best is frozen. Out of season veggies shipped from the other side of the world have lost much of their nutrition by the time they get to you. I try to stay away from canned veggies as much as possible. I do can my own tomato products and I home can green beans, but the rest is frozen.
