  • Broccoli Cauliflower salad

    I have a recipe for broccoli cauliflower salad and I want to know if this would be good as a whole meal for lunch at work or if I need to add more too it.

    Broccoli
    Cauliflowre
    cheddar cheese
    bacon
    mayo
    splenda
    vinegar

    I love this recipe! However, I find it is something I can only eat a small portion off. I personally add it to something. Doesn't answer your question, but I love this salad and wanted to comment

      I love it too and usually only have it as a side dish. But the other day I did not have lunch ready so I grabbed a lunch portion and it was good for that. I just need to know if that was a good idea or not good for some reason! Thanks!

        This sounds delicious. How much mayo and vinegar do you use, and do you leave the veggies raw, or cook them some?

          For a big batch I use a head of cauliflower, 2 big bunches of broccoli florets. I cook them in a little water in the microwave for about 6 minutes. Drain, add some shredded cheddar cheese, about 5 slices of crumbled bacon. For the sauce I use about 3/4 cup mayo, 2 or 3 tablespoons apple cider viengar and 1/4 cup of splenda and mix together. It is even better after you let it sit for a few hours.

            Meals and snacks should be a combination of protein, fats and carbs. You might want to plug the recipe into fitday.com to get its nutritional profile (% of fat, protein and carbs.)

              I am thinking it does not have enough protein.

                Thanks kpoll19. Well, you have quite a bit of bacon and cheese, both good sources of protein. Sounds yummy.

                  I think I will add some grilled chicken to it as well if I want to use it as a meal instead of a side order. That ought to do it!

                    So I had to make this yesterday after it came up this week. I put in a tiny bit of red onion and it was great. I put both the cauliflower and broccoli in raw. Very good

                        Last weekend, I made a batch of fresh broccoli salad (broccoli florets, mayo, vinegar, red onion, bacon, ranch dssg). It lasted two days as a side for many of my meals. For me, it is better as a side dish. I just like having that 3-4 oz of MEAT and the veggies as sides.

                          It really ups my fats for the day to have it as a meal. I agree! After putting it into fitday my fats were higher than they should have been and the highest percentage came from that.
