Appetizer:
Slice zucchini lengthwise thinly (slicer works best, I think) (even one of those four-sided ones)
Spread with cream cheese (flavoured or not - you can mix the cream cheese with herbs)
Put a piece of smoked salmon on it.
Roll up; secure with toothpick.
Serve on platter for fancy dinner party guests :yes
Obviously, you could put steamed asparagus (or canned), tuna salad, or whatever you choose.

Latkas
Substitute grated, well-drained zucchini for potatoes in potato pancakes. Use vital wheat gluten or some other substitute for the flour.

Broil, sprinkled with parmesan (or choice of cheese)
Sliced thickly enough, they can even be used as "crust" for individual pizzas. You might want to rub them with olive oil and broil a bit first.
If you like them raw, substitute them for pita as a handful lunch.
