  • Craving Crispy

I don't find myself really craving bread or sweets, but I do crave crispy. I feel like everything I've been eating recently is soft -- eggs, meat, cheese, veggies.

How do I get my crispy fix?

Pork rinds are 0 g carbs and about as good of a potato chip substitute you're going to get. I have trouble finding them where I am, even within the same chain. I've found that the inner city chain markets where I work carry them, whereas the rural/suburban stores of the same chain do not. I go very light on them as I try to keep my sodium intake as low as I can. They are a 2x-3x week treat for me, and even, then, only a few at a time.

I know what you're thinking. "Fried pork skins? Yuck. No way." That's the way I thought too, until I tried them. They're more like Funyuns with a mild meat flavoring. Very airy and crispy.

          Re: Craving Crispy

you can make 'breading' for strips of meat out of crushed pork rinds and parmesan and egg to make it stick...

also, you can crisp up cheese in the over - microwave

or pork rinds if you're missing chips...

Pork rinds are ok in induction?? Cool. I'm running to 7/11. Not that I'm a pork rind fanatic or anything, but I feel like I just need to deal with this 'crispy craving' so that I don't give into eating something stupid.

have you tried cheese crisps? They are crunchy....I make them occasionally for lunch to eat with rolled up meat or crunch up on salads.

You take deluxe cheese slices (not regular american slices - these are thicker) - cut them into 4 equal pieces....put on parchment paper in your microwave and cook full power for 2 - 3 minutes...the more brown they are the crispier they are...they are delicious!!

Making a breading out of crushed pork rinds and Parmesan is a good way to make really crispy fried chicken tenders.

You might be able to make a "chip" of sorts by mixing crushed pork rinds, Parmesan cheese and some egg white and frying them. I think I'll go try that.

                  Re: Craving Crispy

Thanks, Carole. I'll buy some thick slices next time I'm at the grocery store! That sounds really good & really easy.

For the time being, I have beat the craving with pork rinds. Great suggestion, Slapshot. They have waaaaay too much sodium, but I don't think this once is going to kill me.

My pleasure. Enjoy them and really drink the water. Also, be careful with the flavored ones. The extra spicy ones I bought had 1-2g per serving, whereas the plain ones have 0.

My crispy "chip" idea turned out really tasty and crispy. I took one egg white and put in equal amounts of crushed pork rinds and parmesan cheese until I had a slightly stiff "dough." I put down some plastic wrap and put small balls of dough down and smashed them to about 1/8 inch thickness with the bottom of a glass (wet a little so it won't stick). They will come off the plastic wrap very easily. Then I fried them in butter slowly so they would get crispy all the way through. Yum!

                            Great recipe Sunny!!!!

Another crispy thing is pepperoni chips: sandwich pepperoni slices in a single layer between two or three layers of paper towels. Toss into the the microwave and cook about 1 minute or until crispy.

Newbie here - I tried the cheese slices on parchment in the microwave and they are really great for the crispy crave! There is so much more now in ideas/recipes for induction than when I tried Atkins years ago. I'm so happy to have found this wonderful resource for questions, recipes and support!
