I'm sure there is a recipe link around here for induction breakfasts.. but i figured i'd make my own thread I just whippd this up this am.. enjoy!

    Crustless Mini Quiche

    4 strips nitrate free bacon
    1 green bell pepper
    1/2 large white onion
    5 white mushrooms
    5 eggs
    3/4 cup heavy cream

chop up bacon, pepper, onion and mushroom very fine and fry in pan
sautee until cooked, about 10 minutes.

in separate bowl, whisk eggs and cream together

spoon bacon mixture into greased muffin tins, laddle egg mixture on top and sprinkle cheese on top of that.

place in oven for 10-15 minutes at 350 until firm.

these are great to eat fresh out of the oven, or ziplock them and keep them in the fridge for a snack!

    Yield 12 servings
Per Serving: 1.7 carbs, 5.7 protein, 10.9 fat, 126.9 calories.

Thanks for posting the recipe I often make crustless quiches but my recipes all include cheese, so it is good to see a different variation to try.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
