not sure about zucchini
hi guys i looked at the carb counter on atkins.com and it has 1 cup of zucchini at 2.2 carbs . im austrailan we just call them zucchini s i notice in america but they call them summersquash . anyway would this b accurate for the amount of carbs they have im guessing 1 cup is about 100 grams ?cheers muz

Yes, muzza. That's close. I just plugged it into Fitday and got these numbers:
1 c. raw zucchini has 18 calories, 3.8 grams carbs and 1.2 grams fiber. When you deduct the fiber, you get 2.6 carbs per cup.

Zucchini and yellow squash fall into the category of summer squash, which are way less starchy and carby than winter squash. Winter squash are the acorn squash, hubbard squash and the like.People who say it can't be done, should not interrupt those doing it.
