I am a big fan of shiratake noodles. They are a great spaghetti substitute. I like mine with tomato, garlic and bacon sauce (topped with cheddar) or with a cheese sauce. Yum! Thanks for posting this - I have some in my fridge so will have them for dinner PS My info says they are zero carbs.

They are acceptable during Induction. However, these are not the shirataki noodles we were talking about in the other thread, but tofu shirataki noodles. Tofu is allowed during Induction, but it has to be counted towards your cheese allotment.

I just bought 6 bags of Shirataki noodles (without tofu). They are induction friendly.

Taste = mmmm no taste really, it absorbs the flavors of whatever it's cooked with. Just make sure you rinse them thoroughly as they do come with some funky smell.

Texture = rubbery, slippery, a bit weird.

If you can get past the texture, you'll be very pleased.

Georgiana, Im vegetarian and thought that I could use it as a meat substitute as the packet says zero carbs. So I can only have 4oz tofu a day?

              Thanks.

                Re: Induction friendly noodles...really?

I hate to rain on everyone's parade, but shiritake noodles aren't on the Induction Acceptable Foods List. So technically, they aren't allowed during Induction phase.

That being said, people do add them to their Induction menues or to their OWL menues.

But I look at it like this: Induction is a minimum of 14 days, if you can't do without a noodle-type product for 14 days, you really have to re-examine your priorities and motivations.

You can have maximum 3-4 oz of cheese per day. This includes soy cheese (tofu) and "regular" cheeses.

The packet says 0 carbs per serving, because they are allowed to round up or down the carb count. So if you eat more than one serving, you can no longer count it as zero carbs. To be on the safe side, I would count 1 serving of tofu as 1 net carb.

I'm not snippy. I'm just being factual.

Dr. Atkins said don't eat anything that isn't on the Induction Acceptable Foods List during Induction. Shiritake noodles aren't on the list. Since we go by the book in this forum, it's my obligation to give you accurate, factual information.

I'm sorry if you perceived getting factual information as being "snippy". It's just that I don't want to lead you astray on your Diet.

                        Re: Induction friendly noodles...really?

Be sure to read the label on the noodles carefully, almost all of the packs of shirataki noodles I found do indeed have carbs from added starch (from konnyaku - a root vegetable), making them unsuitable for induction. Unless you find some made from tofu (like the OP) or that have equal carb/fibre counts (made from 100% glucomannan), you may be better to give them a miss. In NZ we appear to have stricter laws regarding rounding, as almost all of them report net carbs from starch.
