    Hi BigJay,

I'm a die hard carnivore and eat a lot of red meat. Although Dr. Atkins never to my knowledge set a limit of any kind for beef, he did encourage people to expand their menu to include not just beef but chicken, turkey, lamb, fish, shell fish etc etc etc.

One valid concern with eating large amounts of red meat is the massive amounts of growth hormones, antibiotics and other questionable things injected into cattle and put in their feed.

For that reason alone, I personally buy Organic dry aged beef - it's expensive but tastes better than the substandard "Choice" grade of beef you'll find in most markets.

Very few markets sell "Prime Quality" beef, Whole foods does and they have their own dry aging rooms.

If you eat a lot of red meat I think it's worth doing the leg work to find a better source and definitely worth the extra dollars.

I will only buy grass-fed beef.

The hormones and antibiotics cows are fed in those feedlots to offset the livestock's inability to process grains in their body are not good for America, let alone for the people who eat it. And it's torture for the cows who live every day sick because they can't process the foods they are eating!

Yes, grass-fed beef is slightly more expensive, but the taste quality alone is worth the extra effort.

Check out Laura's Lean Ground Beef by going to her website. She'll even send you a coupon and you can enter your zipcode to see who sells locally. I buy mine at Albertson's and Super Target.

I just realized that there is no red meat on my induction menu, just chicken, ham, and tuna. And I'm still gonna get plenty of cals and nutrients. That's just one more good thing about Atkins, if you don't like a food you don't have to eat it.
