  • This is day 14, my last day of induction m

    I have lost about 7 lbs. I haven't weighed since Monday as I am out of town on business and prefer to use the same scale, so it might be a little more.

    I am stunned at how well this is working, I mean really stunned. I did not do this well even on South Beach induction years ago. I am a bit confused and worried about the next phase, I still don't love vegetables.

    In this phase, I have eaten broccoli, cauliflower, lettuce (lots of lettuce), a tad of tomato here and there, a few mushrooms and asparagus. What other vegetable can I eat really at OWL rung 1? Eating more of those isn't turning me on!

    But I am going to keep trying. I like what I see so far.

    I miss sandwiches and croutons the most.

    Congrats on your loss! Check the metabolic resistance charts in the book to see what your degree of metabolic resistance to weight loss is---that will help you plan the rest of your Atkins.

    As for the veggies you can eat during Rung 1 OWL and Induction.....there are over 50 veggies on the "salad" veggie list and the "other" veggie list. All 50+ of those vegetables were legal for you to eat these last 2 weeks, all 50+ are legal for you to eat during OWL Rung 1.

    PS. Croutons are a possibiltiy even on Induction. you can make croutons out of tofu. Freeze a block of tofu (in its package, no need to drain the water) for at least 48 hours. Defrost the frozen tofu. It will have a spongy/bready texture. Divide the tofu into crouton sizes. Dry well by patting and lightly pressing between layers of paper towels or kitchen towels. Then saute in oil or butter until crispy.

      Thanks. I think I am of average metabolic resistance. That I guess is good news. I am not generally a tofu fan, but perhaps as you describe, I can do it. Is there a link to the veggies on this site someplace? I think we are in a rut.

        One veggie that I miss is onion...its on the 'other' list, but I don't use it much 'cause its a bit higher in carbs.

          Onion is my favourite veggie. On induction I used more green onions and leeks work well too.
          I am so going to try that crouton recipe. That looks cool. Thanks Megs.

          Have you tried to make revolution rolls momof3chicks? They are like sandwhich replacements for induction.

            Revolution rolls?? Are these the things rolled up in lettuce?

              There's a sticky at the top of this forum called "Induction REcipe Basics" a recipe for the Revolution Rolls are there.

              Onion is legal. I've found that smaller amounts are just fine in many recipes.

                Revolution Rolls (Improved)

                4 egg whites
                1/8 teaspoon cream of tartar
                3 egg yolks
                3 packets Splenda
                Pinch salt , pepper, onion powder & garlic powder
                3 ounces cream cheese, softened

                Beat the egg whites and cream of tartar until stiff. In another bowl, beat the egg yolks, Splenda, salt and cream cheese with a mixer until smooth. Gradually fold the yolk mixture into the egg whites being careful not to deflate the whites. Spray a baking sheet or muffin top pan with cooking spray. Divide the mixture into 6 mounds then flatten them slightly. Bake at 300ยบ 30 minutes or until lightly browned on top but soft and not dry and crisp. Cool on the baking sheet for a few minutes then cool completely on a rack. Store in an airtight bag in the refrigerator.
                Makes 6 rolls
                Per Roll: 88 Calories; 7g Fat; 5g Protein; .5g Carbohydrate; 0g Dietary Fiber; .5g Net Carbs
                Per 2 Rolls: 175 Calories; 14g Fat; 10g Protein; 1.5g Carbohydrate; 0g Dietary Fiber; 1.5g Net Carbs
