  • What is your favorite induction meal/recipe?

    My favorite is soup. I use 2 cups low sodium chicken broth, 2 cloves of garlic, 1/2 a cup thinly sliced red cabbage, 2 thinly sliced mushrooms and 1/2 a cup bok choy. I season with black pepper and a little salt. It tastes like a Chinese soup and I eat this 2 times a day, I expect to be getting sick of it soon but so far, soooo goooood!

    You know, now that you say that, I made a very good soup too. Turkey broth and cabbage and onion, celery, cauliflower, turnips and one can of tomatoes in a crock pot and alot meals out of it for the week. When you get tired of salad, veggie soup is a great alternative. I never got tired of it either.

      I love soup too. If you add a drop of chili oil and a drop of toasted sesame oil to your soup, it will knock your socks off!

      During Induction I liked (and still do) faux-jitas---sauteed or grill chicken or beef, cut into strips, the rolled into a large lettuce leaf with a dab of salsa, a slice of avocado and sauteed onion and green peppers.

        It's a toss up between taco salad and taco omelet.

        I cook up several pounds of hamburger into taco meat, then freeze it in portions. Add some grated sharp cheddar, a couple grape tomatoes, a few olives, a dab of ranch dressing... yum yum.

          For me, I struggle with induction because breakfast is so hard because I'm not crazy about eggs and they are hard on my digestive trac. Anyhow, someone shared a recipe with me once for a good breakfast change ....

          3 eggs (prepare to scramble)
          Ground Pork Rinds
          A teaspoon of vanilla
          A tablespoon of heavy cream
          A pinch of cinnamon

          You mix it all together adding in the pork rinds to make more of a batter consistency. Pour it into a frying pan prepared with butter or non-stick cooking spray and fry until golden brown. It's a sort of french toast flavor with a hint of bacon (the pork rinds does that) it's really amazing! I pour a little bit of sugar free syrup and enjoy. It's really good!

            babymama, your soup sounds wonderful! I am planning to have it for lunch tomorrow... with not2late's suggestion of chili oil and sesame oil!

              I made some low-carb pancakes the other day, I got the reciepe of the Sugar Free Sheila website Sheila's Low Carb, Atkins & Induction Friendly *ORIGINAL* Recipes Page!. The pancakes were fantastic! great alternative for anyone who it sick of the standard eggs for breakfast!

                I put my new muffin top pan to work and made the Easy Oven Pancakes from Linda's Low Carb site - Linda's Low Carb Menus & Recipes

                They were so easy to make and yummy too!

                Tonight, we're going to try the BLT "Potato" Salad - Linda's Low Carb Menus & Recipes. I'm looking forward to it.
