Re: pumpkin question
Pumpkin is on the "other vegetable" list and is limited to 1 cup daily, provided you eat only 2 cups of the "salad vegetable" list.Originally posted by ashleykc7182 View Posti got a can of pumpkin. Don't go by 1/2 can or 1 can, because the size of the can varies.

Re: pumpkin question
As one who is not crazy about veggies, pumpkin is a life saver for me.
This is not my receipe but is super and induction friendly.
Mix the following together:
1/2 Cup Libby's Pure Pumpkin (NOT pie filling which has sugar)
1 Tablespoon butter
1 Tablespoon heavy whipping cream
1/4 Teaspoon pumpkin spice
1 Packet of Splenda
1 Tablespoon cream cheese if desired
Heat in the microwave for 15 seconds. Stir. Heat another 15 seconds. Yummy.
(Note - heating times may vary slightly depending on microwave)

Re: pumpkin question
Congratulations on starting college Ashley.
I am not a big measurer but this is about what I make
Cream cheese - (a cm or two slice)
Pumpking around 5 tbs (or thereabouts)
splenda - 1 tea spoon
cinnamon 1 tea spoon
nutmeg a dash
I heat the cream cheese a bit - 20 seconds. I stir everything else in and then reheat around 1 minute. And I eat slowly - because I want to enjoy it.

Re: pumpkin question
I really like pumpkin "bread". I have it everyday!
3T pumpkin
1 oz cream cheese
1 egg
1t pumpkin pie spice
Mix it all up until blended and microwave in the bowl for 4 minutes. Yum! I top mine with butter. You can add Splenda or something for more sweetness. I like to avoid artificial sweeteners and it tastes good without it. It really puffs up like bread.
I just made a loaf of it tonight. I have NO idea if it's good or not. I'll let you know. I figure this way I can slice it and have it on the go.
BreeSkipping alcohol rung
Skipping beans rung
Extremely limited rung 9 when I get there. Maybe once a week.

All the recipes above are desserts.Originally posted by ashleykc7182 View PostAny other deserts like dishes that are induction friendly?
You either measure 2 tablespoons of fluid heavy whipped cream or 4 tablespoons of whipped heavy cream, since the cream doubles its volume when whipped. Use measuring cups for this. There is a thread here explaining how to measure foods properly: http://www.atkinsdietbulletinboard.c...-properly.htmland also i had a question about whip cream. It says 2 tablespoons how the heck to you measure that lol.
Do not eat the stuff that comes in a pressurized tube though, because that has sugars in it. Beat your own cream.
