I realise that we have to allow for artificial sweetner when chewing gum but should I also count 1 carb per piece of gum, and if so, how accurate is this carb count?
It's tricky, because SF chewing gum is sweetened with sugar alcohols. Each of us metabolizes sugar alcohols differently, so while 10 g of ____ [insert sugar alcohol] might mean 8 net carbs for me, they could mean only 2 for you.
I think a piece of gum has 2 g of sugar alcohols. According to the American Diabetes Association, half of the sugar alcohols a diabetic consumes should be considered to have an impact on his/her blood sugar levels.

I chew the orbit gum with sugar alcohol.It has one gm per stick,I chew just a pinch, maybe 20% of a stick at a time.Not sure if I have chewed a whole stick yet.A pinch is all that is needed to freshen breath.
