  • Another Green Bean Question

    Yes, I've read the dozen other threads where users ask if green beans are allowed on induction, and everyone says yes. I'm just wondering why it's not listed on the Acceptable Foods List on the Atkins web site? I've looked for "green" and "string" beans and haven't been able to find it?

    What are your thoughts?

    String beans are on the list above. It is the list of foods from DANDR 2002, the book that we reference on this forum.

      That's because Atkins Nutritionals modified the diet after Dr. Atkins' death and their website does not reflect what's in the book. By the book, avocados are limited to 1/2 per day and are not counted as part of your vegetables. Same thing about olives. By the book, you have to eat 3 cups of vegetables, not 12-15 net carbs. By the book you should not consume more than 4 oz of organ meats a day; the website doesn't mention anything about them. And don't even get me started about the Atkins bars...

      But going back to green beans. I'm pretty sure no one from Atkins Nutritionals would say "don't eat green beans during Induction" if asked. After all, they are quite flexible...

        Hah! Didn't mean to strike a nerve, Georgiana.

        I THOUGHT I remembered green beans from the book, but just couldn't figure out why they aren't on the web site. I have the book in audio, so it's kind of hard to reference specific portions. That's why I use the web site (Atkins). I guess I should use the list on the thread here on ADBB from now on.

        Simmering a big pot of garlic green beans with bacon on the stove now.

            Here's how I made this batch. It tastes excellent.

            I cut up four slices of bacon and cooked it until the fat rendered out and the bacon was crispy. Add 1.5 tbsp garlic powder, .5 tbsp onion powder, 1tsp kosher salt, 1 tsp freshly ground black pepper, and .5 tbsp minced fresh garlic to the hot bacon renderings. Let cook a couple of minutes and add in the green beans. Let green beans saute a couple of minutes, then add your cooking liquid (stock, water, etc.) and let simmer for about 30 minutes.

            Keep in mind, though, that I cooked a 6 lb. can of green beans, so you will want to cut back the seasonings a bit if you're cooking less. This is even better with fresh green beans, because you can really saute and caramelize the green beans in the bacon renderings.
