    Evaporated cane juice is sugar.

This has been my experience - you can find bacon with either no nitrate/nitrites or no sugar... never both. I have looked everywhere; even the huge Whole Foods Market in town does not have one with both no sugar and no nitrate/nitrites. So I opt to make bacon an occasional treat, and go for the no sugar. I have found a very inexpensive brand of no sugar bacon called Gwaltney at Walmart.

I knew that Evaporated cane juice is sugar, so I read up on bacon in Atkins and it says:

"Processed meats such as ham, bacon, pepperoni, salami, hot dogs and other luncheon meats-and some fish-may be cured with added sugar and will contribute to carbs. Try to avoid meat and fish products cured with nitrates, which are known carcinogens..." (124).

When I enter it into fit day it gives me a carb automatically so I figure that into my carb intake. It is an acceptable food and it has **to indicate that it is cured with added sugar and may have nitrates. He doesn't say we can't eat it. So I eat it. I haven't had a problem with it, though some people might. If it wasn't on the list though, I wouldn't eat it.

Re: What to look for in bacon

I grab the thick, wide bacon that looks delicious at my supermarket. It's got sugar, nitrates, and probably strychnine but it says zero carbs so God bless. Considering I only eat 2 slices a day and I've dropped 13 lbs in 6 days, all is well.

If I choked down a pound of bacon every day, I'd probably reconsider the choices.
        What I do:

        Daily salads/veggies
