I knew that Evaporated cane juice is sugar, so I read up on bacon in Atkins and it says:
"Processed meats such as ham, bacon, pepperoni, salami, hot dogs and other luncheon meats-and some fish-may be cured with added sugar and will contribute to carbs. Try to avoid meat and fish products cured with nitrates, which are known carcinogens..." (124).
When I enter it into fit day it gives me a carb automatically so I figure that into my carb intake. It is an acceptable food and it has **to indicate that it is cured with added sugar and may have nitrates. He doesn't say we can't eat it. So I eat it. I haven't had a problem with it, though some people might. If it wasn't on the list though, I wouldn't eat it.
