I have read the book and all that but I was wondering what happens to your weight loss if you don't get in enough carbs on a day or for 2 days. Say you are having a day where you eat more meat than anything else and you only get in 10 carbs - as long as you are taking multivitamins you will be fine correct?

Let me guess---you've read the new Atkins book, not DANDR 2002. Here we are following DANDR 2002.
According to DANDR 2002, you do not have to eat 12-15 net carbs coming from vegetables, but 3 cups. These three cups can either come from three cups of salad vegetables OR from two cups of salad vegetables and one cup of vegetables from the "Other Vegetables" list.
So as long as you are eating 3 cups per day, it's okay if your carb count is 10 net carbs. Just remember that over half of your net carbs should come from vegetables.
Also, I hope you are exaggerating when saying "eat more meat than anything else". Atkins is a high fat diet, not a high protein one. I think yes you will be fine if you did that.
In the end if we follow this WOE (way of eating) correctly we will end up eating a lot of veggies every day and at most meals. Low glycemic vegetables that are also nutrition rich are going to be a main staple in our diet. It is because in the end if everyone filled at least half their plates with these vegetables all their life - instead of junk and starches we would not have gotten fat in the first place. Now, on Atkins, we are learning to give vegetables back their rightful place in our diet. So do not skimp!!!!
It is a new habit for a healthy life.

The book says that we are to eat no more than 20 net carbs daily and that the majority of those carbs are to come from vegetables. It's not a good idea to eat "more meat". Dr. Atkins wrote that excessive dietary protein will be converted to glucose by your liver and what's not immediately used for energy will be stored as body fat. So eating more meat defeats the purpose of losing body fat, if the excess meat will eventually be stored as body fat.
As for multivitamins...they are supplements, not replacements. A manufacturer can use as much or as little vitamins they want. They can even pick and choose which vitamins to include and exclude. Hence the "specific formulations" for children, pregnant women, women, men and senior citizens. These amounts are typically based on the RDI (recommended daily intakes) of these nutrients and these are standardized by the government.
But here's the catch: some of these RDI's are wrong because the FDA requires the amounts are based upon published scientific data. This is why the Vitamin D recommendation was increased last year: when the initial recommendation came out the panel could only use published data, which they knew was wrong because they were doing experiments showing that higher amounts were necessary for good health. But they couldn't use that information because it wasn't published.
So that's why vitamins should only be used as supplements, not replacements. Quite simply, they aren't complete.~Megs~
