  • Cucumbers

    I am on day 6 of Induction, and since I have started it, I have noticed the sweetness in foods that I thought were bland...like cucumbers! I never tasted the sugar in them before! Almost too sweet for me! (I'm not one for sweets usually) It's amazing!!

    I try and go with if it tastes sweet, spit it out.May or may not cause an insulin secretion.I don't chance it.

      your tastebuds are changing -- you will notice a difference in the way a lot of things taste. Cucumbers don't taste sweet to me so I'm happy I can still eat them!

          I'm thinking of cutting them from my food list. They are just too sweet! It's like eating a crunchy sugar cube!

            Phil, because you are not eating vegetables from what I understand, hence you are not following DANDR 2002, you are exaggerating facts to fit your own views about eating. But things are a little different in reality, at least in the reality of DANDR. The sweetness of a food is not a reliable indicator that the food is messing up your blood sugar levels---coffee can do it and it is bitter; plain yogurt can do it and it is sour.

            Many of us discover that foods that were not particularly sweet before, like peppers, for e.g., have their "sweetness". It is a normal consequence of a decrease in our sweetness threshold as a result of not consuming tablespoons of sugar per day. Red and yellow peppers taste sweet to me. So do berries, cauliflower or macadamia nuts. But none of them gives me a blood sugar symptom (table in Chapter 13, pp. 150-151 in DANDR 2002), nor do they interfere with my weight loss.

            But of course, if you don't like cucumbers, by all means don't eat them. The good thing about Atkins is that you have 54 other vegetables you can still enjoy.

              Oh, I love cucumbers! I tried to cut them out today, but no luck. I am just going to have to get used to their sweetness now. Thanks!!

                My taste buds changed and I notice the sweetness in things I normally would not have before...probably those high fructose corn syrup filled drinks and snacks number my taste buds. I agree with Georgiana on this. Nothing wrong with cucumbers.

                    Too funny - I noticed the same thing with cucumbers just yesterday. I bit into one and thought, when did they start adding sugar to these things?

                      Cut the sweetness by using something acidic like vinegar or lemon juice. Just a little sprinkle of vinegar or lemon juice will do it.

                      Bottled creamy or regular dressings won't typically do it because they add sugar to make the dressings more sweet. I think their aim is to drown out the taste of the vegetables completely rather than to enhance it----sort of like ketchup or barbecue sauce: kills the taste of the meat so it tastes like sweetened tomato paste.
