  • My induction salad substitute

    After a week of spring mix/baby romaine I was having trouble facing the bowl of greens daily. But this week should be easier because I found a sub!

    I got a buy 1 get 1 spinach deal in the salad section. When I sauté 8 cups it becomes 2 cups. I added butter to the pan to start and seasoned with garlic powder after. This way I only have to face a half cup to get my daily salad intake up there!

    ...and I'll bet it's good, because it sounds great! I'm going to try it myself as I love spinach!

      When I sauté 8 cups it becomes 2 cups.
      All veggies during induction are meant to me measured raw. So 8 cups is 7 cups over the allowed amount for Spinach since it is listed as "other" on the veggie list and there for you can only have one cup.

      There is a sticky listing all of the legal inductions foods and which group they belong to in the induction form. You might want to print that out...I still have mine on my kitchen wall by the fridge.

      That being said, it does sound good.

        Jenny, it does sound delish, but 'ohbehave' is right, allowable induction veggies are to be measured raw.

        I feel you, salads can get pretty boring. The recipes forum has wonderful salad substitutes!

          Wait, I only have to measure them raw- not each them raw right?

          My goal was to eat 2 cups of spinach but I realize now I can only have 1... Sigh!

          They seemed so low in carb compared to my broccoli- I did not pay close enuf attention!

              You could cook any of the 'salad vegetable' list in the same way if you find eating 2 cups of them is hard or getting boring for you. Sweet (bell) peppers cook down into a much smaller amount as do any of the leafy greens that we are allowed 2 cups of.

                Thanks. I will! Although I'm still unclear why dr. A put spinach on the 2nd list. I thought the net carb count was 1 per cup of it which is less than my radishes or peppers per cup. Usually the rationale is more obvious to me...
