  • i need something crunchy!!!!

i'm starting again! I went off of atkins my second semester senior year of college. It was sometimes difficult being at school to keep to it and I decided that I wanted to just take it easy for that final semester and not worry about anything. Well, now i'm realizing how much better it was when I was eating that way. I was thinner and healthier and I was really into the low carb life.
I started induction again on the 28th of March and I've been doing great. I've had a mostly clean induction so far, but i am dieing for something crunchy, like dorito crunchy! I dont' want a dorito, but i want something with a different texture, just something different. I know pork rinds are something crunchy, but isn't there anything else? Something I can make? What does everyone else do?

I have started getting my crunches in celery! Pork rinds just don't do it for me, and celery is uber-healthy and crunchtacular!

speaking of pork rinds...I decided to try some today because I was starving...maybe it was the brand but I hated them...big disappointment...I was hoping to find a new easy snack.

I am going to seem like a total idiot but i have no clue what Jicama is...is it some kind of vegetable? I've never had it, but I keep hearing about it!

                Pepperoni crisps!!

Put a sheet of parchment paper on a cookie sheet and lay slices of pepperoni on it..they can be quite close together because they shrink.

Bake at 350 for 10 minutes, and then keep an eye on them until they are crisp. It's a fine line between crisp and black..so watch out!
Put them on paper towel to soak up any grease, let them cool and enjoy!

Remember pepperoni is high in salt, so watch your intake.

Some folks microwave these, but that never really worked for me, but the oven did a great job.

If you let the parchment cool right off, you can just crumple it up and toss it afterwards..no mess! :joy

Jicama is a vegetable that looks like a potatoe but tastes like an apple/pear combination. Very tasty & crunchy

if you need some fiber for bowels you can make not2lates flax seed meal chips and dip them or use veggie sticks and your favorite low carb homemade dip.

                    Happy low carbing.

Thanks everyone!!! I am going to try putting the pepperoni in the stove. I've microwaved it before and i like it like that, but it doesn't get crispy so maybe the over will work better!

                        Cheese Chips

Mix some shredded fresh Parmesan cheese and a little chedder as well. Put some wax paper on a baking sheet and make small piles of cheese, pop them in a 325 degree oven until the cheese melts, and starts to look a little crisp. Remove them from the oven and let them sit out for a bit - they longer they sit, the crispier they get - You can get creative as well - I sprinkle mine with a little cayenne pepper, or garlic salt. They make a great cruncy snack. Not to mention they work really well as a dipping chip into a home made salsa ( induction friendly of course ) or a nice induction friendly guacamole ( avacado, and a touch of sour cream ). I even use them as a base for a small taco salad. I weigh out my cheese and make 1 oz chips so I know that I can only have 4 of them in a day - but on the days that I do eat them - what a fantastic treat! Be sure to keep within the limits of induction.
                        Hope that helps ! :wave
