  • Rhubarb?

    Hello all,

    Does anyone know if we are allowed Rubarb on induction?

    and what do you have with it?

    Yes - it is on the one cup list! As when cooked it is appreciably smaller you would need to measure it before cooking.

    I stew it in a little sweetened water till soft and make a dessert with whipped cream or put it in a dish with sweetener and top it with some of my flax muffin recipe 'batter' and bake or microwave to make a sort of pie.

    It is also nice raw sliced into thin slices, sprinkled with granular sweetener and topped with cream. Tart but refreshing.

        I stew it similar to Elizellen and I use it as a condiment for roast turkey, chicken or pork-----it's like a cranberry substitute.

        And surprizingly, it gives Asian-style brothy soups (like hot and sour soup) a nice tartness and the rhubarb essentially disintegrates in the broth.

Then wrap bacon around the trout (so the trout looks like an Egyptian mummy---a bacony, yummy mummy ) Then roast the trout in the oven. The bacon gets nice and crispy on top, the trout stays moist and gets a light smoky flavor and the rhubarb gives it a tartness that replaces lemon.
