I just looked on Arby's website. They have a terrific nutritional listing - you can select your sandwich of choice and then customize - I was able to un-check the bun and dressing. They breakout carbs, fiber and sugar grams as well.

They are not using cheese in that stuff, but some cheese food/sauce that has 2 carbs per 21 g and contains modified corn starch, maltodextrin, nonfat dry milk... among some other really crappy ingredients.
Eggs, cheese, whole veggies, canned meat are easy to carry with you and eat when you get hungry or when 6 hours have passed since your last meal. Or you could go at Arby's, but tell them to skip the cheese sauce and bring your own, Induction-legal cheese to have with the meat. But for 2 oz of roast beef, which is what's left without the bun and the cheese, I wouldn't bother.

Oh, by the way, it would be better to have some veggies with your lunch (I imagine that's lunch), so that you spread your veggies throughout the day and avoid a blood sugar spike.
I was looking through the other stuff they have at Arby's. The roast beef sandwiches look better if you toss the bun.

They also have 2 chopped salads that you can have without the shredded cheddar (potato starch).
