im confused. what are organ meats, and what exactly is 4 oz of it, i read in the book that it says not to eat more than 4 oz of organ meat a day. :confused

Yep, organ meat is liver, heart, gizzards, sweetbreads (pancreas, thymus), chitterlings (if you don't know what they are, don't ask), etc.
I eat chicken liver and beef liver every so often: I think they're yummy if prepared the right way.~Megs~
