    Hi everyone,

    Just about to pop down to ASDA to get some groceries and am a bit stumped on some easy lunches to take to work??? I am a bit done on the salad thing and was hoping to try someting a bit different. What did you have for lunch today?

    today for lunch I'm having:

    Salmon and parsley "salad" : chunks of leftover cooked salmon mixed with fresh parsley leaves, sliced red onion, black pepper and lemon juice.

    Chilled cucumber-mint soup: peeled chopped cucumber, fresh mint leaves, sour cream and water tossed into a blender and pureed. I make a large quantity of this and keep it in my refrigerator.



    I typically have leftovers for lunch. But I re-make my leftovers so it won't be so "leftover"-like. The salmon was Sunday's supper: it was simply cooked---just salt and pepper and roasted in the oven.

      I usually have left overs from nite before - chicken/ salmon with roasted veg & a liitle salad

      today I had ham, 2 boiled eggs, green peppers, 3 cherry tomatoes

          cole slaw mixed with mayo... a bit of a different taste than salad and more crunchy!

            I am boring. Its usually salad and something like a hamburger, tuna salad, chicken salad.

            I have made wraps using a large piece or two of lettuce (of some sort)..cheese, some kind of deli meat (which I don't use much) or tuna and mayo. Then just roll them up. Worked well when I went hiking.

            I agree leftovers are a good idea, I just don't usually have much for leftovers lol.

              Make a big pot of soup...toss in meat and veggies into a nice broth...you can add your favorite oil or butter if you want...You can freeze bowlfuls in the sealable bowls and take them out either the night before or that morning and microwave them at lunch time.

              The lettuce wrap idea is a good one...You can use leftover meats for that too if you don't want lunch meat. Maybe invest in a meat slicer or mandolin?

              Also, cabbage rolls are fun too. You can either make them vegie style or with meat...cook them in broth in the oven...store and reheat for lunch.

              My favorite salad has shrimp skewers (cooked night before) and avocado on butterhead lettuce....very yummy! You can use a spicy ranch dressing on it..Yummy.

              I love cabbage stir fried into hamburger...If you don't like butter with that, try olive oil or sesame oil and some soy sauce! Its a great leftover lunch!

              Low carb wings with salad and ranch is nice..as is low carb meatballs with salad and sour cream mixed with shredded cucumbers (squeezed dry in cloth) and pepper as a dressing.

              Get some good Gyro meat and cook it up...put on salad with olives, feta and sour cream sauce as mentioned above.

              Personally...One of my favorite lunches is a salad from Subway! stop by in morning...have it made to go...and its all ready for lunch! I know its salad...but its nice that its fresh and someone else made it!!! rofl

              Love the ideas posted previously..especially the cabbage and mayonnaise one!

                Ahhhh Asda's!

                Lunch ideas:
                tomato, basil and mozzarella salad,
                an omelette (spinach/tomato/ham etc)
                olives with feta and antipasto,
                make some soup - my fave is a simple cream of mushroom (just make sure you count all the grams!). Homemade soup is soooooo much better than canned (the thought of gelatinous mushroom soup in cans makes me a little queasy!). Ham and pea is a good one to do, too.
                cook some chicken drumsticks, maybe with a spicy rub (in the foreign foods aisle in Asda's there are some great spices: barbecue, cajun, lemon and chilli etc, which I sometimes sprinkle over salmon or chicken if my imagination runs out!)
                I also have taken to keeping a bottle of hot sauce around so that I can't eat so fast and need more water!
                Stir fries are good (though try and make your own sauce as shop bought are horrible, MSG ridden, salty things usually)
                Leftovers
                Ratatouille - be careful to count carbs with this, as the vegetables and tomato sauce can quickly add up. I sometimes add smoked paprika or chorizo for extra pizazz.
                Otherwise, I always have an easy-open can of tuna nearby - this with some chopped peppers and onion, a spoon of mayo, makes a great snack.
                The packs of peppered mackerel are great, also - fish keeps me going for ages (though I have opted for not heating them at work, if I wish to remain friendly with co-workers!)

                Mmmmm, hungry now....
