I know jicama is on the first list of veg we can have on induction. My problem is how much at a time..I have 3.1 oz fried in butter and 1/8tsp of cinnamon for lunch..that is all I had because I am not sure if I should have anything else as that is 5 net carbs. does that amount of jicama account for the 2 cups of veg or more or less than ?????

One cup of jicama accounts for one cup of salad vegetables, even if it's higher in carbs than, let's say, lettuce. 3.1 oz of raw jicama is approximately 0.7 cups.

Georgiana, Thank you for your quick response..I usually have half my salad at lunch with a piece of chicken or turkey then split the last bit with some cauliflower or other acceptable second veg for supper..but with the jicama I had no idea what I could have with it..off to heat up a piece of chicken...thank you so much
OK 3.4oz of chicken and 1 TBSP of mayo added to that 3.1oz of Jicama I had

by the way Georgiana how did you figure out that 3.1ounces of Jicama are .7cups??
I tried to google it and Wikipedia came up with
JUst curious as I can never figure that out ( well when liquid I can)and that is why I try to measure everything by the ounces
When I put it into the measuring cup it was less than half a cup??

Did you measure it raw? Sliced? Diced?
I took the numbers from nutritiondata.com. 1 oz is 28 g, so 3.1 oz will be 86.8 g. 1 cup of jicama according to NutritionData is 130 g, while 1 cup of sliced jicama is 120 g. So I took 125 g, because I didn't know what you did with the jicama.
Then you have:
125 g .................. 1 cup jicama
86.8 g ................. x
And
