  • Veggies?

    Hi guys, I just started induction today and I was just wondering what veggies are best?

    I have home canned green beans from my grandma, are those ok?

    What about frozed brocolli, or bell pepper mix frozen?

    here is a list of the veggies are you allowed to eat -- as far as grandma's green beans they should be fine -- frozen broccoli is what I eat most of the time and the bell pepper mix is ok as long as they don't have any ingredients not on the veggie list.

    Vegetables
    You can have two to three cups per day of:

    alfalfa sprouts
    daikon
    mushrooms
    arugula
    endive
    parsley
    bok choy
    escarole
    peppers
    celery
    fennel
    radicchio
    chicory
    jicama
    radishes
    chives
    lettuce
    romaine lettuce
    cucumber
    moche
    sorrel
    These salad vegetables are high in phytonutrients and provide a good source of fiber.

    Other Vegetables
    You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

    artichoke
    celery root
    pumpkin
    artichoke hearts
    rhubarb
    asparagus
    chard
    sauerkraut
    bamboo shoots
    collard greens
    scallions
    dandelion
    snow peas
    bean sprouts
    dandelion greens
    spaghetti squash
    beet greens
    eggplant
    spinach
    broccoli
    hearts of palm
    string or wax beans
    broccoli rabe
    kale
    summer squash
    brussels
    kohlrabi
    tomato
    bean sprouts
    leeks
    turnips
    cabbage
    okra
    water chestnuts
    cauliflower
    onion
    zucchini
    If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

      Thanks! I love brocolli and peppers. And in those frozen bag mixes that is the only thing in them.

          This is probably a duh question but only to those who know the answer

          I have always weighed my food so the veg have me a little confused some times. Should I use a 2 cup measuring dish and when it is loosly packed that is my two cup veg no matter what is in it(well off the veg list of course)

              Thanks for the list and i have it saved, but it still does not help if I am not having 1 cup of only that veg..My problem is finding out the weight of 1 cup of these veg mixed in a salad..i posted a fresh link to maybe help you understand what I mean..Maybe I just don't get the math on this it never was my strong suit..this is where I messed up the last time I tried this diet...

                If you are mixing the veg it would be easier to just fill the cup measures with them.
                Wondering how to get 'most' of your net carbs from your induction veggies?

                  Heidi what I do is put everything loosly packed into my measuring cup then put it on my plate on in a bowl to eat.
