Ideas of what to add to a beef roast?!

I am new here (I know I was supposed to introduce myself, haven't yet!) & I have a roast in the crockpot. I usually would put a package of Lipton Mushroom & Onion soup mix on top (7 carbs) & then add potatoes & carrots & dip those in ketchup. Obviously none of which I can have now!! So, anyone have any good suggestions to add to a roast? I put in garlic powder & salt & that is all so far. Thank you so much for any suggestions!!!

Both mushrooms and onions are Induction legal vegetables. So you can saute fresh mushrooms and onions and add them to your crockpot. If you have dried mushrooms, so much the better because the flavor is more concentrated.

Thank you, I will have to give that a try! I also thought about trying the fauxtatoes but have to go to the grocery for those.
