  • Stumped...

    OK so i am having problems with figuring out what to eat... i have to admit that i am a pretty picky eater! I dont have a lot of money to work with since i am a single mom and a college student. The good thing is i do have access to my colleges rec center so i will be working out 5 days a week while im on campus. I was just wondering if someone can throw a few meal ideas at me.. maybe your favorite induction dinner.. Thanks!

      Eggs are cheap. Have you browsed Linda Sue's website? She has some great recipes and alot of them can be made ahead of time and frozen. You can freeze in individual servings, grab and go and heat when you get to where you are going.

      I work two jobs and am taking college courses as well. I check out what the specials are at the grocery store each week and then plan a menu. I do eat omlettes, salads, linda sue recipes or make up my own little meal based on what I have. For example, if I have some ground beef, I'll brown some up, thrown in some stewed tomato and veggies and call it a meal. Most of the time its broccoli or cauliflower and then top with cheese. This is similar to what Linda Sue has for receipes, sometimes I just need the short cut version.

      Not sure what you like or don't, maybe give some examples of what you do or don't like and everyone can chime in.

      It is doable!

        One other thing to do is maybe go to to your local wholesale warehouse like Costco or Sams and buy a little bit larger amounts. They last sooo much longer.

        For example:
        Lettuce at Kroger/Walmart/Target was $3 for 2 things of Romaine Lettuce
        Bj's Wholesale had 5 things for $3.99 so it lasted my hubby and I a few days longer and only $.99 more. You can get some great deals. NOT everything is a better deal but some is.

        You can make this work. A lot of times eating healthier like this is cheaper than the way you were use to. You just have to plan.

          I make a lot of stir fry dinners. I can use any protein and any combination of veggies, some green onions, garlic, red hot peppers flakes, olive oil and I have dinner in 20 minutes. My current favorite is cut up baby asparagus, red peppers and scallops or shrimp (or both).

          I also make quiche. There are lots of recipes here for it. Again, any veggies, additional protein or not, cheeses.
