  • Early Riser - Breakfast Help

    Hi Everyone -
    I leave my house at 5:00am and get to work at 5:30am. So cooking before I leave for work is out of the question - barely get myself out the door. Does anybody have any ideas for breakfast? Thanks!

    Leftovers from last night's dinner

    precook hard boiled eggs

    Try the breakfast egg shake that gets posted every so often

    invest in a microwave

    get up early enough to fix breakfast

    take extra lunch and nibble on it later in the morning

      Good ideas. I keep boiled eggs on hand for when I don't have time to cook breakfast. I also bring extra lunch and eat it for breakfast sometimes. Can you microwave stuff and eat at your desk?

        I make crustless quiche at the weekend so I can grab a slice or two on my way out if needed as well as being a quick'n'easy supper on those evenings I can't be bothered to cook.

        Mine have cheese, eggs, cream, bacon & cooked veg in them so it is a well balanced meal or snack.

            Lots of crustless quiche recipes here. I make mine in a 6-cups muffin pan so I get 6 individual quiche "muffins." They also freeze well so I can have a variety of different types on hand.

            ETA: These are very portable and are good either hot or cold. I use a silicone muffin pan for easy removal but you could spray a regular metal one with non-stick cooking spray or grease well with butter or use foil muffin cups.

                I've also made the Mock Danish the night before and it's ready to go in the morning. I've used various fruit-flavored extracts in place of the vanilla for variety. I make my mock danish in a cereal bowl.

                  so I made a quiche-thingy with cauliflower, eggs and cheese in the muffin-pan and OMG - it's delicious, it really is, I LOVE IT!

                    My hubby made the mock danish after he saw it on here the other night. While it does not LOOK pleasant it is super good! And only takes a couple of minutes to fix.

                        Stephanie,

                        I find with the Atkins way there is absolutely no getting around cooking. It simply becomes a part of your life. So maybe pick a day of the week that you're free and spend a couple of hours making up all sorts of random treats/meals

                        When I was working full time, I found it much easier to invest 2 hours a week in cooking all at once rather than having to think about it every day. That way you just open the fridge, pick something up and go.

                        If all else fails, it really takes less than 5 minutes to make a faux danish and they're sooo good!

                          Hey I just wanted to mention the cream cheese muffins. They are soooo easy to make and you can keep them on hand in the fridge. Every morning I have one with my coffee and it holds me until lunch.

                          I dont remember whose recipe it is but whoevers it is - its awesome!

                          Cream Cheese Muffins

                          2 8oz philly cream cheese packs
                          2 eggs
                          1/2 cup splenda

                          soften the cream cheese then add the eggs and splenda and mix it all up. Stick them in muffin tins - scoop two big spoons in each and it will come out to 12 muffins -- i use the cupcake cups but they stick a bit but still not bad. Some people sprinkle cinnamon on them before sticking them in the oven but I like them without. I think you bake them at 400 in the oven until they are browning a bit on top.

                          The trick to these is not to eat them right away. You have to let them cool for at least 3-4 hours or better yet overnite. Or stick them in the freezer and then take them about for a bit and eat them half frozen they taste delicious.

                            I make a spinach pie/quiche type meal and reheat at work....includes spinach, eggs, cheese, ham or other meat.
