  • Salad and veggies question

    During induction you are limited to 20 carbs per day. The acceptable foods list for induction is: 2 to 3 cups of salad and 1 cup of the other veggies if salad does not exceed 2 cups.

    I type that up only verify that my understanding is correct (because that might be where I am confused).

    However, if I examine the salad nutritional information, I note that for 1 serving (there are about 2.5 per container) that the total carb is 6 and the fiber content is 5; making for a total of 1 digestible carb. Now even if I eat the WHOLE thing of salad, which I don't, I still only wind up eating about 2.5 carbs. And I've eaten 2+cups of salad. Lets toss in a low carb salad dressing like the "Creamy Italian Dressing" in the back of the book and sans overloading it.. lets make it 4 table spoons I use for my whole thing of salad. This still brings my daily carb count to about 6.5. And I've eaten all of my allowed servings of veggies per day. So my question boils down to is it 20 carbs OR this limit of veggies. Or is it 20 carbs even if you exceed the veggie limit? Is there really a harm in eating more? Or should retool my diet to include more carbohydrates veggie-wise?

    I appreciate any clarification you can offer.

    Yes, you should choose more nutritious vegetables - they have more carbs, but they are good for you. It is best to try to stick to the 3 cups of higher-carb "salad" & "other" veggies rather than adding more lettuce.

    Don't forget that you want to get more than 1/2 of your daily carbs from veggies, so if you eat eggs, cheese, cream, etc, you really need to choose different veggies.

      Julie is correct, on this board we follow Dr Atkins instructions as written in DANDR to have up to 3 cups of veggies per day, and that 'most' of our carbohydrates ought to come from our vegetables.

      This makes it vital to choose the more nutritious (and more 'carby') vegetables from the two lists as much as we can if we also want to use those other foods which make our way of eating so workable like eggs, cheese etc.
