You're making me do math here... beware!

Ok if 1 stick of celery = 1.5 carbs, then 3 sticks of celery = 4.5 carbs.

If you are making whole jalapenos, then you need to measure them whole, but if you are chopping them up, then measure them after chopping.

According to Fitday.com 1 cup of slice jalapenos is 3 net grams of carbs. 1 pepper is 0.5 net carbs

cauliflower - go by how much you can loosely put in a measuring cup. If the florets are small then you can put more, but if you put in florets and stems then there will obviously be less cauliflower. So thats at your discretion.

    Hope this helps!

The easiest way to measure is to get a standard cooking measuring cup (the 'dry' measuring cups work best for vegetables). And measure the vegetables out. Estimating the vegetables by "guessing" how much is in a cup will get you into trouble fast, because many of us can't not estimate portions. So get a set of standard measuring cups and spoons and start measuring.

This link gives instructions with photos on measuring flour, but the same instructions can be used to measure vegetables, fruits, nuts, etc.

Also use a carb counter, like the one at http://www.calorieking.com to figure out the carbs.
