I adapted this recipe from
Sugar Free Sheila.com: The ULTIMATE Resource For Atkins Information
Her's is a little different but here is what I did.
I bought portabella mushroom caps
I flipped them over and added 1 Tablespoon of Tomato Paste per mushroom. I used two so that was (5 carbs)
Then I shredded some mozzarella cheese over the tomato paste
Added some pepperoni
I baked it in the oven for 15 @ 400 degrees.
The mushrooms were a little wet, but other than that it really looked like a little pizza. We have pizza every friday night for supper and I was able to sit with the family and eat 'MY' pizza. I didn't share with anyone, and no one wanted to share!
It didn't taste like a pizza crust but it was the whole mental thing for me, I was EATING PIZZA! I didn't even want to eat the other pizza because I had my own!
According to Sheila this recipe is 12 total net carbs. I didn't eat many carbs that I know of today just to save up for this treat!
