Chicken, broccoli, cheese, roll up (like chicken cordon bleu), dip in butter, but what to use instead of bread crumbs? Any ideas? Maybe parmesan cheese?

I totally broke away from "breading" when on Induction. Instead, I dusted the outside with a combination of paprika (try hot or smoked paprika) and a little onion and garlic powder then sauteed it in ghee, olive oil & butter or coconut oil. Very tasty. Sometimes I would make a sauce by deglazing the pan with a little broth and adding a touch of cream to it.

Pork rinds and Parmesan cheese mixed together. It works very well.

i've read that alot of people use pork rinds...i was going to buy some but never got around to it. i'm thinking of doing my chicken rolled in them.
i have a convection oven and i put a chicken on the rotisserie at least once a week..great way to cut the fat from the skin, with a nice tender juicy flavour...just sprinkle with some salt..yuumm..that's what i had tonight.

I can't get pork rinds here, but I dip it in egg or mayo and then roll it in the canned parmesan cheese and some spices.
