  • Ideas for Induction Lunch

    Hey,

    I am on day four of induction and the only problem I am having is at lunch time. I am in class all day without a refrigerator so I am worried about taking meat to school and having it go bad (especially since our college seems to always have the heat on no matter the weather). The hospital cafeteria has some salads, but I don't want to use all my veggies on lunch. Everything else is very carb heavy. Please help!

    How about a small lunchbox type ice chest? Put a couple of frozen bottles of water that will melt throughout the day, giving you extra drinking water and will keep things cool. Then you can take whatever you feel like eating with you.

      Boiled eggs will keep until lunch, or take tuna in a container and mayo separate and mix them in the caf. A little cooler bag is your best bet and the water idea is a great one. Then you will drink more water too.

        I would advise you to bring tuna in a can and cheese. I also live in a hot place and at work, I usually bring babybell cheese with me and I open a can of tuna too. Sometimes I cook the tuna with some eggs and green onions.

          Look around for other containers/freezer packs. I do like the water bottle idea and do that at times when I have to be out for the day. At our grocery store I found these containers...you freeze the tops. The bottom is a regular plastic type dish (not too big). Then there is a little cup that sits in the top. So, I put celery in the main part, and dip in the top and it keeps them cold. I also found little freezer packs in Stuffmart (Walmart) for my son's lunch...his are shaped like M & M's..maybe 2 inches diameter. So not too heavy or big. With some type of freezer pack, I think you would have a lot of possibilities.
          My favorite is a "wrap". I take a large lettuce leaf, a piece of meat (usually turkey for me), some mayo and a sprinkle/slice of cheddar. You could put other veggies on it. Then just roll it up and off you go. You could put tuna or egg salad in a wrap too. I usually make 2 of these and can't always finish the 2nd one.
          Could you make an induction friendly soup/chili/stew and bring a thermos?
