Example~ One cup of (non-salad veggies) peppers is 149g I believe. The green squash is 113g. What if I want to eat both? How do I make a full cup using grams if the squash is more?

Pepper is a salad veggie so you can have two cups of that one but the green squash (zucchini or perhaps chayote?) is a non salad veggie. So you can have plenty of both.
Lots of good nutrients there.

Yeah guesstimate will work fine. It is not going to matter that much if you eat a few pieces more of veggies here or there.

Not necessarily ... different vegetables will weigh different things ... "cup" is a measurement of volume, not weight in this case.J.
