Do you think it matters if you get all your veggies/water after lunchtime? I imagine it wouldn't matter, as long as you go them. But I just wanted to be sure!

You should be spreading your veggies out throughout the day, or at the very least dividing them between your noon meal and your evening meal.
Saving the 3 cups of vegetables for one meal can destabilize your blood sugar. Make sure you eat the vegetables with fat and protein.
As for water, you want to spread that throughout the day too. Drinking large amounts of water at one time can lead to some very severe medical problems...including death.
