  • Easy fast breakfasts and lunches

    I was just wondering about some quick easy breakfasts and lunches! I work at 6am til 2:30pm and don't give myself enough time to cook before work, but I am very plain. I like eggs and sausage...would that be okay for breakfast and salad for lunch?

    I need help!

    Yes, those things would be find for breakfast. Make sure the sausage doesn't have added sugar (many ready to cook ones do, and they may be ok for you).

    You don't necessarily need time before work to "cook" ... you could make and egg casserole or a crustless quiche at night ... and then just heat up a "chunk" of it in the morning.

      We make crustless quiches & MUPs & freeze them - then microwave in the morning. There are some good quiche recipes on Linda's site: Linda's Low Carb Menus & Recipes - Recipes

      Note that thawed quiche will be a little watery...doesn't bother me, but you may not care for it.

        You can eat anything you choose for any meal....breakfast doesn't have to be eggs - it can be leftovers from a previous day, or anything you want to eat.

        Try to eat vegetables with each meal to help keep your blood sugar from dropping and cauing cravings. Also, make sure you drink the minimum 64 ounces of water daily.

          I make up a dozen hard boiled eggs at a time. I work 6-2 like you, jwoods03, and I had a hard time planning things to take for meals. So, I take a couple hard boiled eggs, some frozen broccoli and a tiny bit of cheese. Then I'll have a salad at lunch with a bit of meat thrown in. When I'm not doing that, I'll purposely cook extra for dinner & container a portion of it for work the next day. All I have to do when I leave is grab & go!

              Make sure your salad for lunch contains a combination of protein, fat and carb. You don't want to stack one meal with a bunch of carbs because you don't want your blood sugar level to go wacky.

              As for breakfast...as others have said, it doesn't have to be eggs/bacon/sausage. In fact, I seldom have eggs for breakfast---but I do have them for supper (because they're quick to fix after work.)

                Eggnog with flavors. In a blender put 2 eggs, heavy cream and water mixed and some flavoring, I like vanilla. Its quick and easy. I also make myself a flaxseed muffin in the microwave. They are really good for you, but not exciting taste.

                    I like to make a batch of deviled eggs and grab n go when I am in a hurry. They are soooo yummy, with a couple pieces cooked bacon ( I keep a bag in the fridge of that also).

                    or, if you like egg salad, make a batch, and then in the morning you can throw some in a big piece of lettuce and wrap it up.

                    For lunch, I always keep a bunch of cooked beef and turkey burgers in the fridge along with a big bowl of salad (romaine and cucumber),. Viola! I can toss a burger or two in the mic, and dip in mayo, or mustard, with pickle, a small salad and I am good to go.

                    Those are my staples.

                    Oh, I just started making these YUMMY wraps for hubby, they are super yummy and you can have all ingredients in the fridge so all you have to do is assemble and eat!

                    Get a package (or few like me) of chicken tenders. coat with nonstick spray, and McCormick Rotisserie chicken seasoning and grill. Keep in fridge in a ziploc. Then take a romaine lettuce leaf, a sandwich stacker dill pickle, some mayo and dijon mustard, and optional a slice of provolone or other cheese, (unprocessed), and wrap up. Its delish! The pickle makes it!

                    Other suggestions are anything you can make ahead and keep in teh fridge to just reheat over the course of the next few days or week, like a casserole, or quiche like someone else suggested. I just made a Shephards Pie (mock of course), TO DIE FOR! And have been having a little for lunch the last couple days.

                    If you get a little creative with your food and think in terms of making ahead your days should be easy breezy on plan!

                            It is OK to add as a supplement for fiber and to use for constipation problems. The amount in DANDR seems to be 1-2 tbs for this purpose. So that would be half a minute muffin. Just pack the other half away and nuke for a second or two the next day.

                              Yup, this is my favorite one. I made two batches for this week. I made it on Sunday night, cut up both into 4ths, put half in the fridge, half in the freezer. All ya gotta do is microwave it for about 60 seconds when you want to eat it... yum!
