With sea scallops (the big ones), make sure they're dry, put in a shallow pan, pour melted butter on top, add a spritz of lemon, a sprinkle of grated parm and paprika. Broil. Mmmmmmmmmmm.
With cape scallops (the tiny ones), a garlicky cream sauce works well (saute minced garlic in butter--do not brown, add a little heavy cream and grated parm. Serve over wilted baby spinach (quickly sauteed) or zucchini noodles. Make sure the scallops are dry before cooking.
With both of these sometimes I add a few drops of Frank's Hot Sauce for a little zip.

I eat scallops at least once per week while Atkining. I just take a tablespoon of mayo and add a little sugar free sweetened with Splenda pickle relish and make a tartar sauce dip. Yummmmm
1st Goal ~ 199 Onderland -Met 3/29/10

3rd Goal ~ 150 In the home stretch
