Okay, so what kind of dressing can I put on my salad?

      Georgiana...help me out in understanding this. I know that the list of ingredients is listed in order from greatest to least. That being said:

      maltodextrin is the first ingredient which would imply that there is more sugar than anything else. But the Nutrition Facts say 0 Sugars.

      Buttermilk Salt is the second ingredient (don't know if others ingr. have salt) but the sodium content is 135mg or 9% of the DV.

      How do we reconcile that when we are trying to figure out our nutrition facts and ingredient list of what is acceptable? I'm guessing that we can't just rely on the Nutrition Facts but HAVE to look at ingredients and we have to KNOW what those chemical names really mean. BUT...if sugar is the greater ingredient of all combined then how/why can it be "sugar 0g" ?

        Because the labeling laws allow rounding ... so if it's less than 0.5 grams, they can say 0 ... but that doesn't make it true.

        Keep in mind, too, that maltodextrin is very often made from corn.

            Ah! Thanks so much for pointing that out and reminding me I need to keep up with my "Sugar as other names" paper. I hate how they put 0g Sugar and it still has it in there and has just been "rounded off". I do look at ingredients though, I just don't have my "Sugar as other names" paper with me, thanks for reminding me before I went out and bought it, lol.

            Edit: The list you put here is the one I have printed out and carry it with me when I go grocery shopping. I really need to "study" it and remember all of the words! Thanks again!!

              Wow! They make sugar out of everything, and put it in everything too!! They are sneaky, I must say! Lol.

                  Wow! Very interesting!! My husband once went to a diabetic class with his Mom and learned that Sugar Alcohols are not good at all for diabetics, so I try to avoid them (but I am not a diabetic, but still). It is sad though, because back when I was doing "low calorie" almost everything I picked up that was "Sugar-free" (like gum, pancake syrup, candys, jellys/jams, almost everything) had Sugar Alcohols in it. So I guess they are just as bad as pure sugar is. Really, anything processed can't be healthy for you. Thanks for the links, very interesting information!!

                    It depends a lot on the kind of sugar alcohols used. The ones that are usually used in low carb sweets (frankenfoods) are cheap ones like maltitol or sorbitol. These have a significant impact on one's blood sugar, at least when tested alone.

                    There are two nice graphs in Levesey (2003) that compare the glycemic curves of different sweeteners. He also reviewed the relative glucose and insulin responses to different polyols both in normal and diabetic subjects.

                    The paper is free online: Health potential of polyols as sugar replacers, with emphasis on low glycaemic properties (opens as PDF).

                      I am in my 3rd day of induction. I purchased Ken's Creamy Caesar dressing. For 2 tbs it says there are no carbs and no sugar, but when I look at the ingredients I see way down on the list ingredients like sugar, corn syrup and even molasses. So how can there be no carbs? I will continue to use it until its gone (only 2 tbs at a time). What's your opinion? Is this a good or bad dressing?

                            Like others have said, if sugar isn't listed as one of the first four ingredients, and if it has less than 2g of carbs per serving, I have it. In moderation, of course.

                              There are, however, at least 3 kinds of sugar in the Ken's ... one of them being corn syrup!

                              YMMV, but there's more Atkins friendly choices available.
