    Egg Salad
    4-5 Hard boiled eggs chopped
    3 TBS Hellmanns Mayo
    Dash of Onion Powder (no added sugar or weirdness)

    Tuna Salad
    2 Water packed small cans Tuna
    3 TBS Hellmanns Mayo
    Dash of Onion Powder (no added sugar or weirdness)

    Chicken Salad
    Skinless Chicken Breast chopped
    3 TBS Hellmanns Mayo
    Dash of Onion Powder (no added sugar or weirdness)

    I know I am only changing the proteins but for the most part I can live on these items without a problem for I bet a solid month. I also find these travel well in an insulated bag.

    Don't forget to add some veggies, like chopped celery or spinach!

      Those items are OK, but you are missing your minimum 3 cups of veggies in that menu. Also, more than half of your carbs should be coming from veggies - eggs & mayo have carbs.

      You can eat the skin on the chicken & oil-packed tune if you prefer - Atkins is a high-fat, moderate protein, low (not zero) carb diet.

      Check out the stickes in the induction forum - the rules & list of foods acceptable for induction are posted there. I highly recommend that you read the book - on this board we go by Dr. Atkins New Diet Revolution (DANDR) 2002 ed.

        I apologize - I didn't mean this is all I would eat! I would still eat a salad with dinner, Scrambled eggs and (low sodium, sugar free) bacon in the morning,

        I am reading through Linda's website menu and choosing stuff - this is just to hav ein the fridge so i can grab for lunch or dinner if I don't feel like cooking or just need to nosh

        Also a big fan of tilapia, shrimp and other seafood

          Are you at all concerned about mercury from that much tuna?

          It's a neurotoxin, after all!

            atkinsgal08 - no, not concerned on any level actually. I know of no one who has had any issues and I doubt you have either. I also don't take sources like the NRDC who are still pushing Global Warming and selling Carbon Credits seriously.

              If you have an insulated lunch container, you don't have to limit yourself to egg salad, tuna salad, chicken salad!

              For my lunches, I bring leftovers---bbq ribs, chicken legs, shrimp, veggies. I also bring soup in a thermos container.

              If you have access to a microwave: all the better because you can heat these foods up and have a hot meal.

                not2late - I chose these foods because I can make it in quantity and have it easily on hand

                I couldn't agree more on using leftovers but I tend to like to use that stuff at home to make concoctions for dinner - I don't know why but I prefer cold foods while at work and if I want a snack

                  Great suggestions! Adding some diced green onion and celery will add a nice crunch and some depth of flavor, and chopped spinach will incorporate fiber without affecting flavor. If you ever liked a "traditional" chicken salad that typically incorporates diced apple, try diced jicama instead - you'll get some wonderful crunch, a bit of sweetness and needed fiber and veggie carbs.

                  (You can also add chopped walnuts back into the "traditional" chicken salad at Rung 3. OMG, I'm making myself drool. I need to go make myself some chicken salad now.)

                    Nice suggestions everyone - it's steak and spinich for dinner tonight but tomorrow I will have some really good stuff to work with

                      If you want to add some vegetable to your lunch, try adding a cup of chopped cabbage to your tuna.

                      I have tuna w/ mayo almost every workday and got tired of celery in my tuna. Cabbage adds crunch along with fiber and cruciferous anti-oxidants.
