  • Day 6

    Today is day 6 of induction for me. No weight loss from yesterday, but I am down another inch in my waist! Something I am having to rectify in my mind is that it can be so hard to not feel guilty about some of the foods I am eating! I was a weight watchers follower for so long that I frequently have to remind myself that I am not cheating and am doing all the right things. For dinner tonight I made pollo con crema that had cream cheese in it. Sooooo delicious, but it is still taking some getting used to that it is "ok" to eat foods like cheese and full fat dressings. My boyfriend loved the dinner I made and added a tortilla to it for himself. I couldn't have even really cared less about the tortilla that he was eating, I just enjoyed my chicken and veggies in the yummy creamy sauce. It's interesting that I have not even once found myself wishing for a piece of bread or some other carby food item. I think that all the water I am drinking really helps a lot. I also noticed today when I ate a couple pieces of celery that they almost tasted sweet to me. My water frequently tastes sweet to me because of my ketosis breath, but that was the first time a veggie had tasted sweet.

    I think that the funniest thing about being on Atkins (and I'm really not trying to be gross about this), is that I don't think I have farted once since I changed my eating!! Ha! I'm glad my gassiness is a thing of the past. I'm far too young to be gassy all the time

    LOL, fartfree diet.

    Okay, I had pollo de crema once and I was really disappointed, but it was at a Mexican restaurant in town and one that both my DH and I have decided not to return to. BUT the idea of Pollo con crema sounds so good. Could you share your recipes

      LMAO!!!! I was always too shy to bring that up, but you are so totally right!!! Another advantage!!! Keep up the good work! And I want that recipe too!

        Not to brag or anything, but I really though my pollo con crema was as good as I've ever had in a restaurant! I am going to be guessing here on measurements because when I cook I spice it to taste rather than measuring everything out. Here goes:

        2 lbs sliced chicken breast
        onion
        green bell pepper
        tomato
        sliced mushroom
        1 chicken bouillon cube (crushed)
        6 oz cream cheese
        heavy cream
        Butter and olive oil

        Seasonings:
        Salt and pepper (to your taste)
        Garlic powder (around 1/2 tsp)
        crushed red pepper flakes (around 1/2 tsp)
        oregano (just a pinch)

        Thinly slice the amount of onion and green pepper that you want. The only measurement that matters for this is how many carbs you want to expend on it!
        Sautee the chicken in melted butter and olive oil until mostly cooked through, add in the crushed chicken bouillon cube and mix together. Then add in your sliced veggies (except tomato). Cook all until veggies are tender. Toss in the cream cheese and let it melt while periodically stirring. Add your seasonings and let simmer for about 5 minutes. If it's too thick add some splashes of cream, if not then don't bother. This will thicken as it simmers. At the end top with some chopped tomato.

        Be sure to season this or else I would suspect that it would be pretty bland. This is enough for two meals for two people. We had it for dinner with lots of leftovers.
