  • Question about "salad" recipe and a different breakfast

    I love salads but I am getting bored. I dont like a lot of veggies. Two I do love are cucumber and tomatoes. Does anyone know of like a recipe (like a dill dressing type) where I can combine the two without them being plain?

    Also I am growing tired of eggs ( done quiches, omlettes,scrambled, fried and poached), anyone have any ideas for a differnt breakfast ( I dont like salmon)

    If you only like two vegetables, Atkins will be extremely difficult for you.

    Did you try all the vegetables from the Acceptable Foods List? Did you try them in different recipes?

    Breakfast does not have to be eggs. You can eat anything from the Acceptable Foods List... even things you would "normally" eat for lunch or dinner.

      Breakfast does not have to be eggs. You can eat anything from the Acceptable Foods List... even things you would "normally" eat for lunch or dinner.
      I didnt say I only like two, just gave the two I LOVE. I have tried most of the veggies. I love most of the leafy ones, spinach and such, tolerate mushrooms and onions and peppers. But gag on broccoli, cauliflower,asparagas,squash and turnips and such. DOnt know why, just dont like them, hense the reason I was looking for some other ideas for the ones I do love. Thanks

        Have you ever tried jicama? It's like a starchy apple. It's on the salad list of veg, and it's pretty versatile - you can fry it, eat it raw, boil/mash it, turn it into an ersatz oatmeal, etc. Very tasty and high in fiber.

        Anyhoo - dill dressing. Food Network has a slew of them, but I've never tried any, so cannot recommend one. The should be quite a few that are Induction-friendly.

          Also, a restaurant down the street from me does a great pickled cucumber salad, with tomato and thin slivers of onion. It's a great combo and super tasty, but I have no idea what's in it LOL. Worth a shot to Google "pickled cucumber salad", though.

                I grew up eating fresh cucumbers, tomatoes, and onion tossed in a salad with a bit of garlic salt as a snack.

                It's nummy, but watch the garlic salt, it's easy to overdo.

                  The crunch is definitely apple-like. The flavor is not ridiculously sweet (kinda a cross between apple and pear), but with this way of eating, I swear your taste buds are more sensitive to a food's natural sweetness. I just diced some jicama up today and put it in a chicken salad (recipe in my blog) - it is so good I will shank my husband if he tries to eat any.

                      For your tomato-cucumber salad, what I do is slice the cucumbers, sprinkle a teaspoon or two of lemon juice or red/cider vinegar and let them marinate, while I slicing the tomatoes. Then I combine them, and add about 1 tablespoon of olive oil (or whatever oil you like), chopped fresh herbs (if I have them) and salt and pepper to taste. If you don't have the fresh herbs, you can use dried herbs, though I suggest combining the dried herbs with the cucumbers and lemon juice/vinegar (this helps to hydrate the dried herb and "blooms" their flavor.)

                      All of the "salad" list veggies can be cooked---including the lettuces! Also some of the veggies, like peppers and onions, taste yummy sauteed, which brings out their natural sweetness.

                      So, try your veggies in different ways of preparation. I like "raw" sauces for my meats and fish. They are easy to do---toss the veg (like tomato and peppers) into a blender and puree, adding a bit of olive oil, salt and pepper to taste (these raw sauces make good bases for soups too. )
