    hey all!
    i'm on day 5 of induction and doing great (7lbs down...i won't let myself step on the scale again till day 7).

    my hubby and i are having a stay in date night(it's snowing like no tomorrow here.) so after coming on here and discovering cleochatra's blog...i think i'm in heaven!! the pizza was wicked (i think its better than regular pizza!) and im going through all the recipes to find more ideas!!!

    Was it the cauliflower one?
    I love it. I think when I made that one I knew I could be low carb forever.

      yes! it was the cauliflower one!! I'm totally surprised I like it since I don't really care for cauliflower!! i have done the south beach diet before, but atkins is by FAR the easiest for me to follow (reading the book probably helped a lot too!)

          I'm going to have to try some of the cauli. recipes. DH says he hates cooked cauli. and I personally can't stand it cooked or raw. So if I can find recipes that make it taste good to both of us, that will mean they are incredible recipes LOL

            That pizza rec is really something. But I think you can also make a crust using zucchini in the same manner it you like it better.
            It is also good to keep trying new things. We all change food preferences and we can and should challenge ourselves sometimes. There is a world of tastes out there.
            If you want to give cauliflower a try - I also like mashed cauliflower - used that often. Or this recipe here:

              I'm going to try both of those recipes because they sound so good! Thanks for sharing.

              When I get hungry for that pizza flavor, I make a pizza omelette, and it's not just for breakfast either. I cut up some pieces of pepperoni in a skillet, throw an egg on top and scramble them up, then add some shredded mozzarella cheese and let it melt. It's quick and easy and we both love it!

                I tried to make this tonight, but it turned out really mushy, not crispy at all (it still tasted good, just strange texture). I followed her directions I think.

                Any suggestions?

                  Same here Heavy B. I've tried making the cauliflower pizza twice and the crust never works out right. It's always too soft no matter how long I bake it and it always sticks to the pan like crazy despite trying nonstick spray and then olive oil the second time I tried. I can't figure it out.

                    Ya, mine stuck to the pan as well, I had to scoop it all out into a bowl. I had strange bowl of pizza for dinner

                      Cleochatra's Pizza recipe is great, as are all the other ones I have tried. But I also discovered this---

                      Here is something I do to make a 1 serving pizza. I make the "base" of Linda's taco bake. I cut it into 6 portions, and individually wrap and freeze the sections. Then they are ready to use when I need it.

                      When I want to make a pizza slice, I unwrap and let the slice thaw for a while, and then add a small amount of defrosted Pizza sauce, (I think Walmart has the lowest carbs/sugar content---and I portion the bottled sauce and freeze that also.)

                      Then I had my toppings, usually sauteed veggies, or sliced olives, or a teeny bit of those little pepperoni rounds. Very teeny bit-only used them once, along with the olives. Then top with a measured amount of shredded mozz cheese. Either bake, or broil, time...just watch it, it depends on how you like to melt the cheese. I suppose you can micro it, but I think the base may get a little soggy??? Never tried it.
