One thing I enjoy is cooked sausage, mushrooms, and red peppers. add an oz of cream cheese and blend really well together. once the cheese is melted and every thing is coated add 2-3 eggs and scramble it all up.. it is soo good!!

also do a search for Mock Danish... oh it is heaven and will kick any sugar cravings

and crustless quiches.. you can do so much with these and they are so easy to make!

I found a really nice recipe in the "Atkins New Diet Revolution Illustrated Cookbook" - Red Mullet with Fennel

                  Softenen butter
                  Tarragon
                  Fennel seeds
                  Garlic

Places these on flesh side of 4 fish fillets, roll and secure with toothpicks

Saute a small fennel bulb in butter, as with the fish fillets. Then place in hot oven and let bake till cooked.

You can use any firm white fish fillets and bake flat on tray in the oven too.

It has an amazing flavour - the tarragon with butter gives it a flavour very much like bernaise sauce and it is soooo yummy! :yummy
