  • Veggie suggestions

    With some great help from other ADBB members, I now understand the importance of eating the full 20 carbs with 12 to 15 carbs a day in "good" vegetables during the induction phase.

    My question is other than a side salad (two cups of ice berg or romaine lettuce with mushrooms, cucumbers, tomatoes) what other delicious suggestions do you have for easy to put together sides of veggies to help reach my 15 carbs?

    two words.... stir fry.
    ditch the lettuce and pick some of the other veggies and sautee them. mmmmm

      Great idea Jimmie,

      I saute onions, celery, red peppers, mushrooms, then add cut up pieces of chicken breast, cook until done, season with s & p, and a touch of low sodium soy sauce. Sometimes I add spinach leaves if I have them in the fridge. Yummy Meal.

        I'm on a roasted cauliflower bender right now (and broccoli too is awesome, had that last night). Fresh or frozen cauliflower on a cookie sheet drizzled with some olive oil and a dash of sea salt, roast at 350 until they start to brown, turn them a couple of times to brown on all sides (not too much). And they are like candy, my kids who hate cauliflower can't get enough of it roasted.

              My suggestion is for you to sit down and look at the veggies on the Induction Acceptable Foods List. There are about 20 veggies on the "Salad" list and about 30 on the "other list".

              Divide the veggies into 3 categories: Like, Willing to try, Not too crazy about it, but willing to try it again.

              On a personal note, the first time I looked at the food list and saw that veggies like artichokes, mushrooms, peppers, radishes, eggplant, snowpeas, sauerkraut, scallions/onions, chard and fennel were on it, I almost did a happy dance because that prevented my menu from looking like: meat + lettuce.

                I LOVE roasted veggies and they are so easy to make. I roast Asparagus, green beans and my favorite Brussel sprouts. If you think you don't like brussel sprouts try slicing them in half and roasting them with some olive oil, salt and pepper and when they are done a little bit of cheese. They come out so sweet. I do califlower and even roast wedges of cabbage.
