GREAT chicken recepie!!!! A MUST TRY

  • GREAT chicken recepie!!!! A MUST TRY

    Hey all, listen I just made this for dinner.

    +Preheat oven to 350
    +I took a 13x9 pan and put some oil on the bottom, NOT MUCH, just enought to coat bottom
    +I rinsed and dried 2 whole frying chickens and seasoned them with:
    minced garlic
    rosmary/garlic mix
    cumin
    salt


    +Once the chickens are in the pan:
    I chopped two sticks of butter, 1 1/2T per chunk
    Put one in the cavity of each chicken, and the rest on the top of the chicken.
    +I put about a cup of chicken broth in the pan

    Roast for about an hour and fourtfive minutes.
    Flip the chickens
    Raise Temp to 400 degrees
    Roast for another 30-45 minutes until the other side is golden brown.

    Let stand for a few minutes, carve and spoon dripping over served chicken. :yikes

    I hope you guys like it!!!!! And I make two so I can have one ready for another lunch or dinner. And the net carbs for half of the chicken is......3 carbs ( and I counted Garlic that you may not even eat. )

    Yes, we have a similar recipe, but sometimes add a bit of chilli powder to make it spicier.

    And the rosemary... YUM :yummy give it just an amazing aroma !!!!

    Those same ingredients recommended by 290wannabe150onAtkins are also really good on a roast leg of lamb !

      Mmmmm I know it is good on lamb too! This was the first time I ever did a whole chicken, I knew we loved chicken and the whole chicken was somthing I wanted to try, and when you buy them whole you save SO MUCH money. We had leg of lamb a while back, it was somthing that we wanted to try too, and we fell in love with it. I think Im babbling, see how much I love food!!! hahahah.

        Gosh, I absolutely love food too, Holly!!!!

        That's why Atkins is so ideal for me, because it doesn't tell me I can only eat a certain amount. I think maybe it's to do with the psychological restriction of most other diets that make me fail, because as soon as you tell me I can't eat something, my brain resists! But the irony of it is that on Atkins, being satisfied with what I eat meant I eat less!

        btw... do you find being on Atkins has made you love food less? I know one of the questions in DANDR is "do you obsess about food?" I know I used to obsess about food ie think about a dish until the next chance I could eat it.
        But now I obsess about it a different way ie how to create my next exciting recipe - I don't think it's made me obsess about/love food any less! LOL

          ooo this sounds soooo good.

          What else is good for chicken -

          cook chicken how you normally like, baked, fried whatever. but pour this sauce over it:

          1/3 cup heavy cream
          1 oz cream cheese
          1 chicken boullion cube

          mix together and heat over medium till cheese is melted and just before milk is about to boil, turn to low and leave until sauce is as thick as you like or boullion cube has melted as much as you like - cubes take forever so you don't need to wait for the whole thing to disintegrate

          It's also good to sautee some mushrooms first and then add the other ingredients on top of it.

          This sauce is also good with pretty much all meats, and it's really good on asparagus too

            As far as obsessing over food, Im sure I used to. But now i know it is okay to eat, until you are full. So I have had to put some psychological will power, cause I am so used to just eating and eating, soo much so I forgot what it was like to be hungry, let alone full. But I was just telling SpazzyHilo that for breakfast I ate three hard boiled eggs, and was really full, normally I have bacon or some meat with it. But things are changing, and everyday that is what keeps my on a clean induction track.

                Yeah, sometimes I eat and eat and it takes me ages to be full. I do know that excessive protein can convert to carbs, but there are just some days that no matter what I eat (even after 20min pauses in between) I simply can't get full.

                I mean the other night I at 3 lamb chops, then I stopped. Then I ate 2 eggs, then stopped. Then another 2 eggs. I had eaten my quota of veg/salad for the day so I didn't eat any at dinner. But I just couldn't get satiated. The last thing I ate was 3 ounces of cheese and finally, I felt full and stopped wanting to eat. It was like I was craving for something, but none of the sugary/carby sort of food, I just craved to eat. It's times like these I wonder how Atkins is supposed to make you feel satiated.

                But one thing I learnt though on Atkins - you can binge on bags of chips and starch-laden foods, but try and binge on protein - after 3 lamb chops, 4 eggs and block of cheese, you wanna stop binging! LOL

                  Yeah I agree. But I must say, this was the first time i actually felt and urge to snack since I started induction. But like you said it wasnt potatoe chips or cookies or anything of the sort. I just felt like pecking a little. That is the first time I have ever not craved sweets or stachy stuff! I cant beleive I am really really doing this, and it feels great

                    It's times like these I wonder how Atkins is supposed to make you feel satiated.

                    try eating a higher fat snack (like cheese, tuna with mayo, egg salad with mayo etc) rather than higher protein! That will do it.

                      If your still hungry after eating all of that.. you need to get more water into your diet. You might be interpreting your body as being hungry, but it could just actually be thirsty. If after you eat something and 30 mins later you still feel hungry, drink some water. If 10-15 mins go by and you still feel hungry, then eat some more.

                        Point taken Spazzy,
                        I knew that about the thirst. I actually forgot. Like right now for breakfast I made a three egg omellette with mushrooms and fresh ham, I cut it in half and then in quarters, and I think I only ate about a quarter of that. So Im sitting here waiting with my water to keep me company to see if I am still hungry. And even if im not. Ill put it up for lunch cause I never like to waste food. Thanks for the reminder.

                          *hehe* If I drink any more water than I do each day, I'd burst! LOL
                          By mid-morning, I would normally have drunk 64oz of water, so by the end of the day I would normally have drunk another 64oz.

                          Plus, when I do feel completely unsatiated, and keep eating, whatever I eat I usually cook in about 4 tablespoons of olive oil just to make sure... so basically I can't say it's because I dont have enough fat or water.

                          Luckily it doesn't happen often Otherwise all those calories WOULD make me put on weight
