  • Lunch disaster

    First, I brought 2 cans of tuna and forgot a can opener. Thats not the bad part. I brought 2 cans of tuna and about a cup of spinach to work with me. I figured, "Hey, I like both these things. I like black pepper and tobasco sauce. I'll mix all this stuff together and it will be awesome!" I mixed it together, and it was awful. I powered through it because I knew I had to eat. I was trying to be creative and now I learned that I should test things out before I bring them as my only food until after work.
    Age-36 years old
    Height- 5'11( I tell short people I am 6'0. they'll never know)
    All time high- 274 (Feb 2010)
    Atkins Start date- 2-26-2010
    Start weight- 274
    1st Minigoal- 250(reached 3-25-2010)
    2nd Minigoal- 235(reached 4-22-2010)
    3rd Minigoal- 219 (that would make me no longer obese)
    Goal- 200

    Yikes. I've had some of those creative disasters but fortunately they've been all at home during dinner.

      I've been experimenting a lot and had good luck. Last night I made grilled pork roast(pork I had already roasted and sliced then put on the grill the next day) wrapped in lettuce with cream cheese and it was awesome. Today, not so good.

        That'll teach you to eat low fat.

        Seriously, that lunch needed some fat of some sort, such as mayo, bacon, etc.

            It was not a matter of trying to eat low fat, it was a matter of running late. I am feeling some guilt, we had a staff development meeting today and it was catered by a BBQ place, Pulled Pork, Fried Chicken, Hush Puppies, cole slaw. I had two serving of the pulled pork without the sauce they provided- none of the other stuff, I put txas pete on it. After I finished my second serving I started thinking,"What if they put sugar in this pork?" too late. I guess I'll never know.

              I cooked avocado in the microwave.. REALLY not my thing. Yuck.

                Been there, done that. I discovered roasted eggplant was awesome with a little parmesian and hint of butter. Yum!

                I also discovered it's *gross* with any other cheese like cheddar. EWWWwww.....

                That was one for the garbage bin!

                But yeah- @home experiments are better than at work. I've done that even not on low carb before.
