    Hi All,

    I started Atkins on Sunday, today is Friday, and as of this morning I was down 4 pounds - which really is like a pound a day! Wow... that's motivating! I am such a huge carb addict though, that I was literally dreaming about fried rice last night - I'm serious!

    I do find my meals satisfying, and if I have a complaint its that there doesn't seem to be anything fast and satisfying (you know like a bag of chips )

    Looking forward to learning and sharing with everyone!

    hi Karen, I just started the program today... and I am already missing my carbs. I had a ton of eggs though. lol Anyway, good luck to the both of us... I know I will need it. Keep up the good work.

          Hahaha, did you miss the "satisfying" part? I know that veggies can be satisfying to some, but I have to learn to like more of them. Sadly, the ones I do like are not allowed in induction. Some great recipes here that I know are going to help me a lot!

              I hear ya! Well I guess we can both look forward to getting over that addiction. I found my first couple of days I ate a lot of eggs too. Omlette (sp?) for breakfast, boiled at lunch - as a topper on my cup of salad, and again on my cup of salad at dinner...

                Cauliflower is the best veggi. It has crunch and its a little spicy too. It is really good raw.

                  I use cauli-rice for my fried rice recipes as well as for serving with curries and beanless chilli (in UK we usually serve chilli with rice not with crackers )
                  My method for making the cauli-rice is just to grate raw cauliflower then microwave it with a little salt, no water, uncovered till it is the texture I like. Stir every minute or so to stop the egde bits burning.

                  If you plan ahead you can make some 'chips' substitutes (crisps in UK).

                  Cheese crackers (microwave or ovenbake small piles of grated cheese or squares of block cheese till melted and crispy)
                  Flax crackers (mix equal volumes of ground flax [linseed in UK] and water, leave till thickened then press spoonfuls into about 1/8th inch thick shapes and microwave or oven bake till firm to the touch)
                  You can add grated cheese, herbs or spices to these for more flavour
                  Cauliflower or zucchini (courgette) 'Doritos' - The Lighter Side of Low-Carb: Crunch time-- Doritos style chips makes mouths munchier

                    Have some dip with the veggies. It helps.

                    1st goal: 139 (earlier weight)
                    what the rungs mean to me:
                    rung 1 - more veggies
                    rung 2 - dairy (some milk in coffee)
                    rung 3 - seeds, nuts (mostly sprinkled on salads)
                    rung 4 - berries, melon
                    rung 5 - wine -
                    rung 6 - beans, hummus
                    rung 7 - other fruits
                    rung 8 - carrots/ potatoes (nah, prolly not)
                    rung 9 - whole grains (fresh Dutch breads...)
                    Major Goal - 128 lbs/ healthy range
                    (on to pre-maintenance)
