  • Looking for good breakfast ideas

    Hi Everyone
    So I have been doing good and am on my 3rd day of induction. I am looking for good breakfast ideas so that I don't get burnt out. Currently I have been making an omelet with mushrooms, bell peppers, onion, and cheese with a 1/4 of an avacado and 2 slices of bacon. Any ideas????

    Yeah I've been eating a lot of eggs as well (I'm 7 days in).

    I thought about making something with cream cheese, smoked salmon, and avocado, but it seems like good smoked salmon is really expensive. I bought some cheap stuff and I almost wretched!

    There has to be something though; a couple mornings I just ate 2T of cream cheese and waited for snack time haha

      Mix it up. Eat something you wouldn't normally think to eat at breakfast. A can of tuna and some veggies. A hamburger patty with lettuce and mayo. Make a casserole the night before for dinner and bring the leftovers for the morning. There are no rules that say you have to have eggs breakfast

        I think the struggle is that a lot of us are used to cereal, bagels, etc. (and eggs), and it's hard to find alternatives that "feel" the same to us.

          I will say, though, that one dish I like to make for lunch and dinner is an "un-hamburger" casserole: 80% lean ground beef with onions and tomatoes, with a side of mustard to dip in I love it.

              What do you like to eat?

              As someone said above, eggs aren't mandatory for breakfast. In fact, eggs-for-breakfast is a relatively new idea beginning in the early 1800s. Before that, eggs were eaten for supper or dinner. Breakfast was cold meat from the previous night's supper or for the not-so-well-to-do cereal (like porridge). That pourable breakfast cereal flakes is an even newer idea devised by the Kellog brothers in the late 1800s in order to support their religious commune (which was strictly vegetarian---the flakes were a vegetarian answer to the traditional meat for breakfast.)

              So figure out what you like to eat. I often have leftovers for breakfast, such as cold roast chicken legs. this morning I had some leftover roast beef. Occasionally, I will splurge and have a BLT (fried bacon, mayo and tomato slices wrapped in a lettuce leaf). Or I have a patty or two of my homemade country sausage.

                I don't often have actual breakfast items for breakfast... today I had tuna/mayo mixture with cuke slices. I did make some egg muffins yesterday and forgot them in my freezer! they are great because you can freeze them or refridgerate them and bring them to work, 15-30 seconds and you have breakfast! Linda Sue's casseroles are great for breakfast. I will often times have left overs for breakfast and have my huge salad for lunch...

                Egg salad, chicken salad, meat with veggies, leftovers, make ahead casseroles (quiches), or egg muffins or even a salad if you want! The sky is the limit!
