I often use cucumbers as "crackers" - with liver pate or salmon pate or cheese and meat or something. Celery has a nice crunch which I like because not that many things on this diet is crunchy so I just like to eat it like it is. Maybe dipped in a dressing for some difference.
Why do you not check out some recipes and then buy the ingredients you need - rather than buying the ingredients and then trying to find a recipe to go with them. You're going about it a bit backwards I think

I love using cukes this way. Also good with the Italian tuna pate (recipe in the back of DANDR).
I also use chopped celery a lot in soups or certain casserole-type dishes. In soups, it gives a nice flavor and gives substance to chowder-like soups.

I slice my cucumbers and put them in a sour cream and apple cider vinegar mix. For my celery, I put cream cheese and olives on it, both are tasty filling snacks.1st Goal ~ 199 Onderland -Met 3/29/10

Final Goal ~ 145 or below (I'll know when I get there) No longer overweight

I eat cucumbers like crackers---top them with things like cream cheese and smoke salmon, etc. I also use them to make chilled cucumber soup (which is nice in warmer weather), there is a recipe for chilled cucumber soup in the Recipe section of DANDR 2002. But I simply peel, seed and cube the cucumber. Then I toss it into a blender with alittle water (just enough to get the blades going), salt and pepper, and a few fresh mint leaves. Puree it. For celery, I really like it in celery slaw: it's basically your typical coleslaw recipe that substitutes thinly sliced celery for all of the cabbage. I also make a Mock Waldorf Salad with celery, jicama and mayonnaise (the jicama substitutes for the apples found in the traditional waldorf salad)
And I use celery to make gravy for roast meats. I put the celery (and a bit of onion) in the bottom of the roasting pan, put the meat on top. Roast it according to the recipe. Then remove the meat and scrape all the cooking liquid and the veg into a blender, puree. To thin out the gravy to the consistency I want, I add water. Boil it and serve.~Megs~

I eat cucumber as snacks....I peel and slice them and add salt & pepper, lemon juice and olive oil. I put them in ziplock bags and leave them in fridge overnight and they will soak up the juice and taste great.God Bless Everyone!
